Responsabilities of Sous Chef, among others:

Lead the kitchen team to ensure that high standards of customer
satisfaction are assured at all times, in the preparation, cooking,
garnishing, and presentation of food and by carrying out whatever kitchen
work is required, eg dealing with deliveries, wash up etc. -
Ensure proper consistency in food preparation and delivery to customers
focusing on the highest quality, flavour and presentation -
Chefs are expected to show creativity and flair and to make suggestions
for new dishes. -
Collaborate with other personnel to plan and develop recipes and menus,
taking into account such factors as seasonal availability of ingredients and
the likely number of customers. -
To ensue standards are maintained in the absence of the Head chef from
the kitchen
