Responsibilities of Sommelier
- Maintain restaurant’s wine and reserve wine inventory and wine cellar, including inventorying, requisitioning product to bring inventory back to established PAR, setting up BIN’s and label all wine storage areas
- Present guests with wine lists, assist with their selections to ensure a proper food and wine match, and encourage them to experiment with new wines
- Cater to guest wine needs throughout dinner service, including but not limited to wine tastings, pouring/refilling wine glasses, answering guests’ questions, and providing memorable guest service
- Must have explicit knowledge of all restaurant food menus and item preparation to develop a wine program that works synonymously with the culinary programs, specifically wine pairings for all menu items
- Maintain stock of wines with inventory pars in mind, rotate new stock with old, maintain wine store room and restaurant cleanliness
- Wine related equipment to be stocked and well kept
- Ensure that proper control is followed on all stock used
- Participate in monthly stock integrity checks in ensuring that stock is managed moved through the property correctly
- Participate in supplier tastings as appropriate
Qualifications of Sommelier
- Great Wine and Spirit Knowledge – MS, MW, ASA or WSET qualifications required
- Passion for training and sharing knowledge with guest and colleagues essential
- Previous Experience as a sommelier preferred but not required
- The ability to converse with guests to enhance their experience essential
