Chef de Rang - GR
CHEF DE RANG in a 5-star luxury hotel.
Duties/skills required:
• Previous experience in the role in hotels or fine dining restaurants;
• Solid knowledge of classic service techniques (French, English, Russian, guéridon, trancio, flambé);
• Mastery of Italian and international gastronomic terminology and dining room procedures;
• Working knowledge of HACCP protocols and health and hygiene regulations;
• Ability to manage and coordinate the rangers and dining room team;
• Ability to describe wines and house specialities with a view to upselling;
• Management of guests' dietary requirements;
• Knowledge of food costs and the basics of sommellerie (preferential).
