16) Chef qualifications at least 2 year course
17) Recent previous experience as a Head Chef/Sous Chef in a busy, but organised
4* star hotel/restaurant kitchen
18) Extensive knowledge of good food handling, food standards and presentation.
19) Proven success at leading a team to achieve high standards
20) Excellent leadership, organisational, communication and motivational skills
21) Ability to motivate team
22) Sound knowledge and passion for food
23) Thorough knowledge of HACCP
24) Thorough knowledge of kitchen management
25) Honest, reliable and hardworking
26) Demonstrate knowledge of cost structures and budget
