Chef de Partie - Pastry - Ashford Castle
We are currently looking for an enthusiastic and dedicated Chef de Partie-Pastry to join the Kitchen team .
Key responsibilities of the Chef de Partie - Pastry will include:
• Ensuring Section stock levels are correct and where required requisitioned in accordance with SOP
• Ensuring mise en place requirements are planned, actioned and handed over in accordance with SOP
• Ensuring all food prepared is done in accordance with recipes an RCH standards
• Ensuring the section is set up and managed to maximise productivity and in accordance with Health and Safety and Statutory Hygiene practices and company guidelines
• Ensuring the section’s stock is cleaned, organised, labeled and rotated in accordance with SOP
• Communicating any challenges re. equipment, food and staff to the chef on duty as soon as it becomes known
• Training staff on an ongoing basis to ensure they are always up to standard with current menu recipes and standards
• Advising kitchen management of order requirements for section stock in accordance with business levels ensuring sufficient stock and no wastage
• Ensuring that fridge temperatures are monitored and reported daily
The ideal candidate for the Chef de Partie - Pastry should:
• Have previous experience in a similar role within a 4 or 5 star hotel environment is a plus
• Possess good knowledge and practical Pastry chef skills
• Have proven experience and ability to manage all cost controls within the section e.g. food cost, labour etc.
• Be fluent in both written and spoken English
• Demonstrate passion for food and food production
• Have excellent communication skills
• Possess good organisational skills
• Be able to handle pressurised situations and busy periods
• Be flexible, innovative and adaptable
